Transaction data from thousands of restaurants reveal that up until the 40- to 50- minute mark, the average check and tip increased with time spent at the table. After 50 minutes however, the check amount starts to decrease as well as the tip percentage.

For guests who stay at a table for 110 minutes, the average tip is only $3 more than if they stayed for 50 minutes. Both the restaurant and server are both better off working more tables at half the time by then.
